Chocolate cake from pancakes

Cake of chocolate pancakes with butter cream is very tasty and easy to cook.



Makes: 12 servings
Prep:    30 minutes
Cook:   60 minutes


Ingredients 

Pancakes: 
3 eggs
2 &1/8 cup or 500 ml. milk 
1 cup flour 
3 tablespoons powdered sugar 
2 tablespoons unsalted butter (melted) 
1 tablespoon cocoa powder 
1/4 teaspoon salt 
1 bar of dark chocolate (2,8 oz or 80 g.) 

Time a cook of pancakes 20 minutes

Cream 
2 & 1/2 cups or 600 ml. Heavy Whipping Cream 
2 tiles of white chocolate (6,43 oz or 200 g.) 
2 tablespoons vanilla sugar or 1/3 teaspoon vanilla extract



Preparation: 

1. Chop of the dark chocolate bars in a medium metal bowl. Bring 2 inches of water to a simmer in a large pot. Place bowl over pan without touching water, whisking occasionally by dint of tablespoon.
Watch carefully; if chocolate get too hot, they will scramble. Remove bowl from heat.



2. Microwave 1 cup of milk for 1.5 min on medium or warm it up on the stove. Combine warm milk with melted chocolate and whisk. 

3. Combine 1+1/8 cups of warm milk with the flour, cocoa powder, sugar and salt. Beat on high speed until smooth.

4. Beat eggs on high speed until very light colored, about 2 minutes.

5. Add the eggs and melt the butter in the dough  and beat on high speed for 3 minutes. 

6. Add the chocolate mix into the dough  and beat again for 1,5 minutes.

7. Preheat the fire frying pan grease with vegetable oil diam 15-18 inch.

8. Pour the batter with the ladle into the frying pan  

9. Bake pancake on one side, then turn over and bake on the other.

10. Place packed  pancakes back to the frying pan in a pile and let it cool in the pan under lid closed.
Put a paper towel under the lid so that it would absorb the evaporating liquid. 



Prepare the cream

1. Melt the white chocolate in the microwave for 40 seconds, stirring every 10 sec
Do not overheat! 

2. Beat the Heavy Whipping Cream with a mixer into a thick foam, gradually adding sugar and vanilla. 

3. Continuing beating, add  the melted chocolate.

4. Beat cream until smooth - about 15 minutes 

5. Spread the cream over each pancake, and stack them into a pile



6. Spread the cream on the sides and top of the packcake stack

7. Decorate the cake with remaining cream and finely grated dark chocolate.
Optionally, you can add to the decoration of any frozen or fresh berries.
